What's for Dinner this Wednesday is a special treat that we only get when I come across a great deal on sausages...sausage sandwiches.
Ingredients: Sausages, 1/8 onion (sliced), 1/2 bell pepper (sliced), buns.
In a medium skillet over med-high heat, cook the sausages and sliced veggies until the onions are caramelized, meat is warm, and the peppers are softened (about 15 minutes).
Place the sausage in a bun and layer some cooked veggies over it and enjoy:
This time I found turkey sausage on sale...less fat but still pretty tasty!
As a Christian, wife, mother of a little girl and two fur-babies, Mississippi State Bulldog, and PhD, I lead a very busy life. MrsDrPoe: Tuna Melts
Welcome to another edition of What's for Dinner Wednesday here on the blog! Today's meal is quick, easy, and a great use of leftover tuna salad...Tuna Melts.
Ingredients: tuna salad*, sliced Italian bread, and shredded cheddar cheese.
Spread the salad on a slice of bread and sprinkle a desired amount of cheese over it. Place on a cookie sheet, and bake at 350 until cheese is melted, bread is toasted, and salad is warm (about 5 minutes). Enjoy!
*Any creamy mayonnaise-based spread can be a tasty substitute for the tuna salad.

MrsDrPoe: Turkey Panini
Ingredients: turkey, bacon, crescent rolls, provolone cheese, jam, sweet potato casserole.
Cut the crescent roll in half, and spread jam on one side and sweet potato casserole on the other. Layer turkey, bacon, and cheese on the bottom roll half:
Place the remaining half of the roll on the top of the sandwich, and put the whole thing in a panini press (or George Foreman grill or on a skillet on the stove). Cook till cheese is melted and turkey is warm. Enjoy!

MrsDrPoe: Pulled Pork BBQ
Happy What's for dinner Wednesday on the blog! Today we'll be discussing a quick and easy recipe that's great for crowds (Mr. Hinds especially likes it) or finals week- pulled pork BarBQ.
Ingredients: 1 pork shoulder (aka pork "butt") or other piece of pork, boneless or otherwise (estimate 4-5 sandwiches per pound of pork), 1/2 cup water, 1 Tbs salt, 1Tbs pepper
Place all these ingredients in a slow cooker (you may need to cut the pork to make it all fit), and cook on low for 10-12 hours:

After the pork has finished cooking, it should be fall off the bone tender. Carefully use tongs to pull the pork out of the pot. Place the meat in a large bowl and shred it using either the tongs or a pair of forks. Add BBQ sauce and toss:

Serve with buns, dill pickle slices, additional sauce, and anything else you like on your BBQ!
