MrsDrPoe: Veggie Pizza

What's for Dinner this Wednesday?  How about some veggie pizza?  While Mr. Poe would politely pass on this dish, I love it, as well as its many variations.

Ingredients (per person): 1 pita pocket, 2 tablespoons olive oil*, 1/4 cup shredded cheese, 2 cups chopped veggies*.


Heat the oil in a skillet over med heat.  Add the veggies and saute till tender (about 10 minutes):


Top the pita with the cooked veggies, sprinkle with cheese, and bake on a cookie sheet at 350 until the cheese is melted and the pita is slightly toasted (about 5 minutes).  Serve and enjoy!


Variations: spread pita with tomato sauce or creamy goat cheese before adding veggies.  Mozzarella cheese on top give this dish a more "pizza-y" feel.

*Here I used what I had on hand- lemon-herbed olive oil, squash and zucchini.  Typically I use regular olive oil, as well as mushrooms, onions, bell pepper, tomatoes, and asparagus in addition to squash and zucchini.

MrsDrPoe: Garden's Bounty Pasta

It's Wednesday once again, and tonight I'd like to share with you my Garden's Bounty Pasta.  This dish is a quick vegetarian meal that works well with whatever veggies you have on-hand.

Ingredients: pasta (go healthy with wheat!), 1 zucchini, a handful of green beans, 1/4 of a medium onion, 1/2 - 1 cup of pasta sauce, 2 tablespoons olive oil (not pictured), 2 teaspoons Italian seasoning (not pictured), mozzarella cheese (not pictured), and salt and pepper (not pictured).


While the pasta is cooking, chop up the veggies and toss them in a large skillet with the oil and seasonings:


Cook the veggies until just tender, then add the pasta sauce.  Serve the veggie sauce over the noodles with some mozzarella cheese:

MrsDrPoe: Cool Kitchen Gadget

When I was in high school, I worked at Williams-Sonoma part-time. It took a lot of self discipline to make any money there because we sold so many pots, knives, plates, and gadgets that I wanted. Since that time, my mother, sister, brother and I have amassed quite the collection of kitchen items from the store, but one of my absolute favorites is this:


a veggie peeler made by the Swiss company, Kuhn Rikon. It fits so nicely in my hand and allows me to peel carrots, potatoes, etc. in no time. AND it only costs $3.50...it's definitely the best peeler I've ever used. If you ever come across one, buy it- you won't be disappointed!
